A New Recipe

I found this recipe in a magazine and thought I would pass it along.  I HAVE NOT tried it, but I like oatmeal and I AM going to try it.  It seems like any hot oatmeal recipe from Wisconsin should be good in the wonderful  Missouri winter!!

BAKED OATMEAL, WISCONSIN-STYLE
Prep 20 minutes, Bake: 30 minutes, Cool: 30 minutes

1 3/4 cup water
1 cup rolled oats
2/3 cup milk
2 eggs, lightly beaten
1/2 c packed brown sugar
1 t. baking powder
1 t. ground cinnamon
1/4 t. salt

1.  Butter 1 1/2 quart casserole.  In medium sauce pan, bring water to boiling.  Slowly stir in oats.  Return to boiling; reduce heat.  Simmer, uncovered, 2-3 minutes for quick-cooking oats or 5-7 minutes for regular oats, or until most water is absorbed and the oats are tender, stirring occasionally.

2.  In a small bowl, whisk milk and eggs.  In another small bowl, combine brown sugar, baking powder, cinnamon and 1/4 teaspoon salt; stir into oatmeal.  Fold egg misture into oatmeal mixture.  Pour oatmeal mixture into prepared casserole.

3.  Bake, uncovered, in 350 degree oven 30-40 minutes or until center is jmust set and sugar crust forms on top.  Cool 30 minutes.  Serve warm with fresh fruit.    4-6 servings

This can be highlighted and copied and pasted to a word document, if you like.   Jo
